EGG SALAD WITH A TWIST...

Egg Salad Sandwich Recipe

This recipe is for a one egg sandwich. If you have more eggs and more people to feed, just double, triple, etc. the recipe.

Ingredients
1 large hard-boiled egg*, peeled and chopped
1-2 Tbsp mayonnaise (to taste)
1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted

* To make hard boiled eggs, place a few eggs in a saucepan, cover with at least an inch of water. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer.

Method
1 Mash up the chopped egg a bit with a fork. Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper and curry powder. Mix.
2 If you haven't already, toast your bread slices. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top.
Makes one sandwich.

Sausage and Egg Casserole

I dedicate this recipe to GG and all the fun memories making this dish...It's FUNNER together, right GG?

INGREDIENTS:
6 slices bread, cubed
1 pound sausage, browned, drained
1 1/2 cups shredded Cheddar cheese
8 each eggs, beaten
2 cups milk
1 teaspoon, salt
pepper to taste
PREPARATION:
Cube bread and place evenly in greased 9x13 pan or baking dish. Sprinkle evenly with sausage and cheese. Mix eggs, milk, salt and pepper. Pour over ingredients in pan. May cover and chill overnight. (if left overnight, remove from refrigerator 15 minutes before baking). Bake 45 minutes at 325 degrees or until set. Cut into squares to serve. Serves8 to 10

Perfect Hard-Boiled Eggs



Have you guys colored eggs with your kids yet? We did ours today (no school!) I like hard boiled eggs, but I can't stand it when they get that gross GREEN ring round the yolk--has that ever happened to you? Well, it's your lucky day because I'm going to tell you how to prevent that--Cover the eggs with at least 1 inch of water, bring to a rolling boil, then cover and remove from the heat. Let them sit for 13 minutes, then rinse in cold water and put them in an ice bath. (I just left them in the pot, emptied the hot water, put it in the sink and ran cold water over them for a few minutes until the pot was full, then added ice and let it sit until all the ice was melted.) It worked! NO RING-AROUND-THE-YOLKIE! Now you know the secret...You can thank me later!

Easy Spinach Squares


This is an easy, quick meal that I especially love because I don't have to make a pie crust for it. My kids really like it because the spinach taste is masked by the other ingredients. I sometimes will substitue finely chopped broccoli for the spinach. You can 1/2 the recipe to make a smaller portion.


6 eggs, beaten

2 c milk

2 c flour

2 t salt

2 t baking powder

16 oz monterey jack cheese, shredded (or cheddar)

2 (8 oz) pkgs frozen spinach thawed and drained

1/2 c melted butter


Mix all but butter. Melt butter in a 11x14 inch baking dish. Add remaining ingredients. I like to sprinkle some salt, white pepper and about a 1/4 t of nutmeg on top before baking. Bake for 35 minutes at 375 degrees. While still hot, cut into bite-size squares. Squares warm nicely in microwave as leftovers.
