FRESH MOZZARELLA, TOMATO and BASIL SANDWICHES

Stevie couldn't wait long enough for the sandwich so I gave her the mozzarella, basil and tomato drizzled in balsamic vinegar and virgin olive oil with salt and freshly crushed pepper.  MMMMMM!
But if you are patient enough to wait the five minutes it takes to make these sandwiches, your mouth will thank you.  Here are the ingredients you will need:
I bought italian bread and sliced it, brushed with olive oil and grilled the bread on my grill pan. (highly recommended)  Then placed one slice of garden tomato (thanks mom), a big leaf of basil, a slice of mozzarella and some pepper and salt.  See how excited Kayla is?
 These did NOT disappoint!
Go pick some tomatoes and basil from your garden and
MAKE THESE TONIGHT!
Lovingly, BON BON

Open Face (Insert) Sandwiches

It's what was for dinner last night.
And I didn't take pictures.
And I didn't even plan on posting this.
But Bon-bon's pushy.

Collect:

~Enough French (or Italian) bread for your crew.
~Cold cuts you like (we favor turkey breast, but roast beef is divine)
~Cheese (our favorites are swiss and provolone)
~onions (thinly sliced)
~red peppers (thinly sliced)
~sliced olives (opt.--it's all optional, actually. this is design-your-own-meal)

Mix:

1 cup sour cream
1/8 cup taco seasoning

SLICE bread lengthwise in halves

SPREAD sour cream mix (or your spread of choice) on open slices of bread

COVER with meat, onions, peppers, or whatever your heart desires and layer the cheese on last.

Put open sandwiches on cookie sheets and into the oven, under the BROILer until cheese is melted and bread slightly browns on the edges.

EAT warm, accompanied by slices of fresh pineapple. (That's how we do it)

the end.

Open Faced Meatball Sandwiches

My little helper. :)

I had left over french bread and meatballs and sauce from dinner the other night so we came up with these goodies tonight. I cut the meatballs in slices so they would stay on the bread, add some parm. cheese and slices of mozerella. YUM! Bake at 375 for about 15-20 minutes.

EGG SALAD WITH A TWIST...

Egg Salad Sandwich Recipe

This recipe is for a one egg sandwich. If you have more eggs and more people to feed, just double, triple, etc. the recipe.
*****
Ingredients
1 large hard-boiled egg*, peeled and chopped
1-2 Tbsp mayonnaise (to taste)
1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted
*****
* To make hard boiled eggs, place a few eggs in a saucepan, cover with at least an inch of water. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer.
*****
Method
1 Mash up the chopped egg a bit with a fork. Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper and curry powder. Mix.
2 If you haven't already, toast your bread slices. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top.
Makes one sandwich.

Sloppy Joes

1 1/2 lbs. ground beef
1 chopped onion
1 chopped bell pepper
1 cup diced celery
1 clove garlic (minced)
1 can condensed tomato soup
3/4 cup water
1/2 cup ketchup
2 Tbsp. brown sugar
1 Tbsp. vinegar
1 Tbsp. Worcestershire sauce
1 tsp. dry mustard
1 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper

Brown ground beef and onion in skillet. Drain. Add remaining ingredients, stir thoroughly, cover and simmer 1 hour. OR (my preferred method) After cooking the meat, dump everything in a crockpot and leave it on low all day. Sometimes it turns out a little watery--I just stir in a little flour to thicken it up before serving on hamburger buns and topping with shredded cheddar or a slice of american cheese. I know it's a lot of ingredients, but don't worry--it's super easy and pretty popular at potlucks!
