Chicken Curry Salad

Have I done this recipe before? :)  I can't remember and with a baby sitting on my lap, I'm too lazy to check.  This is my lunch today.  It's YUM! (and so easy)

Take some leftover cooked chicken (or cook some up special just for this recipe, whatever floats your root beer), toasted chopped pecans, chopped celery, raisins and red apple chunks and mix together.  Add mayo, curry and cayenne pepper to your liking.  Then salt and pepper it til you think it's perfect.  Eat it on bread or lettuce - I'm a rabbit, so I prefer greens.   And then enjoy.

(and don't ask me for exactness here...I make it up as I go)

Chicken Croissants and Spinach Salad

Chicken Croissant Sandwiches:
 4 Grilled chicken breasts
4 large croissants 
4 slices of swiss cheese
Romaine lettuce
tomatoes
honey mustard dressing
(Grill the chicken, add the honey mustard to the croissants, add the romaine and sliced tomatoes and enjoy.)

Honey Mustard:
2 c mayo
1 c mustard
1 c honey

Salad:
baby spinach
chopped apple
chopped Havarti Dill cheese
Craisins
Sugared walnuts
(I used olive oil and brown sugar and stir fried the walnuts until coated, let cool)

Maple Cider Vinaigrette:
1 tsp dry mustard
1/2 tsp dried basil
1/2 c cider vinegar
1/4 c maple syrup
1 T lemon juice
1 clove minced garlic
1 cup olive oil
1 tsp salt
1 tsp salt
1/4 tsp pepper

It's what's for Dinner...and it was GOOD!

CRUNCHY NOODLE SALAD

CRUNCHY STUFF:
1 cup chopped walnuts
1 cup sunflower seeds
4T butter
1 pkg. Ramen Noodles, crushed
(toss out flavor packet)

SAUTE above ingredients until browned.
(if made ahead of time, you can store it in a plastic container until ready to serve)

SALAD:
1 bunch broccoli cut into florets
1 head Romaine lettuce cut into chunks
4 green onions chopped
handful of sugar snap peas cut in half

DRESSING:
1/2 c. olive oil
1/2 c. sugar
1/4 c. red wine vinegar
3 T soy sauce

Mix ingredients and shake well.

Keep salad, crunchy stuff and dressing separate until ready to serve.
YUM to the 10th degree.

Lunch, Sweet Lunch.


In the spirit of 5-a-day, I'm trying VERY hard to eat my fruits and veggies.
I was very glad to be the brainchild of this happy salad.
You can fix it the way YOU like, but here's what I did:

One plate-ful of shredded romain lettuce
One carrot, peeled and shredded
One can solid white tuna (I won't accept anything less--tastes too much like cat
food), drained and separated
Newman's Own Balsamic vinagrette, sprinkled like rain from heaven over the top.

Simple, healthy and DELISH.

Greek Chicken Salad

Hi friends--Welcome back!
Here's a recipe that my Mom makes--it's very yummy if you like feta!
3 cups cooked chicken, cubed or shredded
2 medium cucumbers, seeded, peeled and chopped
10 oz. crumbled feta cheese
2/3 cup sliced black olives
1/4 cup snipped parsley (1 Tbsp. dried?)
1/2 cup mayo
1 clove crushed garlic
1 cup greek yogurt
1/2 Tbsp. dried oregano
Mix ingredients together and serve over lettuce or in a pita.

Applebee's Oriental Chicken Salad

Salad:
1 egg
1/2 cup milk
1/2 cup flour
1/2 cup corn flake crumbs
1 teaspoon salt
1/4 teaspoon pepper
1 boneless, skinless chicken breast half
oil for frying
3 cups chopped romaine lettuce
1 cup red cabbage
1 cup Napa cabbage
1/2 carrot, julienned or shredded
1 green onion, chopped
1 tablespoon sliced almonds
1/3 cup chow mein noodles
Dressing:
3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1/4 cup mayonnaise
1 teaspoon Grey Poupon Dijon mustard
1/8 teaspoon sesame oil
Prepare dressing ingredients by mixing in a small bowl. Refrigerate while
preparing salad.
Cut each chicken breast into 5 strips. In one bowl, beat egg with milk.
In another bowl, combine flour with corn flake crumbs, salt and pepper.
Preheat oil over medium heat.
Dip individual chicken pieces in egg mixture and then roll in the flour
mixture. Fry chicken until browned, drain and set aside.
Prepare salad by tossing the chopped romaine with the chopped red
cabbage, Napa cabbage, and carrots. Sprinkle sliced green onion on top of
the lettuce. Sprinkle almonds over the salad, then the chow mein noodles.
Cut the chicken into small chunks. Place the chicken onto the salad
forming a pile in the middle. Serve with salad dressing on the side.
This is the ONE thing I really like at Applebee's. I've not made it myself, but was excited to see the recipe. ENJOY!

Ranch and Barbecue Chicken Salad


I had this salad at a party for my sister Amy when she was in town for a short weekend. It was really yummy. I don't have the exact recipe but I have made it many times with the memory from my head. Here goes....(it's really, really yummy...)
4 skinless, boneless chicken breast halves
2 heads romaine lettuce
2 romaine tomatoes, chopped
2 cans corn
2 cans black beans
8 0z Mex. cheese, shredded
bag of tortilla chips - smashed into smaller bits
1 cup ranch dressing
1 cup of favorite barbecue sauce
Grill the chicken breasts and cut into thin slices after cooked. Tear lettuce and place in large bowl. Add tomatoes, corn, beans and cheese - or whatever else floats your boat. Throw in the chicken and tortilla chips. Mix it up good. Add dressing and mix thorougly again. This is a salad that needs to be used and cannot be stored. Make according to what your family will eat. This will not dissapoint my lady friends. Enjoy. BON BON

Ranch Chicken Salad

Ingredients:
1 pound boneless skinless chicken breasts, cut into 1/4-inch strips
2 teaspoons chili powder
1 tablespoon vegetable oil
1 package (16 ounces) ready-to-serve salad
1 cup (4 ounces) shredded cheddar cheese
3/4 cup ranch salad dressing
3/4 cup salsa
1/2 cup corn chips or crushed tortilla chips

Directions: Sprinkle chicken with chili powder. In a skillet, cook chicken in oil for 6 minutes or until the juices run clear. Meanwhile, place salad greens in a large bowl or on individual plates. Top with cheese and chicken. Combine salad dressing and salsa; drizzle over chicken. Top with chips. Yield: 8 servings.

Chicken and Black Bean Salad

Ingredients:
1/3 cup olive oil
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1-1/2 teaspoons sugar
1 garlic clove, minced
1/2 teaspoon chili powder
1/2 teaspoon salt, optional
1/4 teaspoon pepper
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 medium sweet red pepper, julienned
1/3 cup sliced green onions
6 cups torn romaine
1-1/2 cups cooked chicken strips
Additional cilantro, optional
Directions: In a jar with tight-fitting lid, combine the first eight ingredients; shake well and set aside. In a bowl, toss beans, corn, red pepper and onions; set aside. Arrange romaine on individual plates; top with bean mixture and chicken. Drizzle with dressing; garnish with cilantro if desired. Yield: 6 servings.

Chicken BLT Salad


Ingredients:
1/2 cup mayonnaise
3 to 4 tablespoons barbecue sauce
2 tablespoons finely chopped onion
1 tablespoon lemon juice
1/4 teaspoon pepper
8 cups torn salad greens
2 large tomatoes, chopped
1-1/2 pounds boneless skinless chicken breasts, cooked and cubed
10 bacon strips, cooked and crumbled
2 hard-cooked eggs, sliced

Directions: In a small bowl, combine the first five ingredients; mix well. Cover and refrigerate until serving. Place salad greens on a large serving platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs. Drizzle with dressing. Yield: 8 servings.

Crunchy Asian Salad

1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
1/2 cup sugar
2 Tbsp. soy sauce
2 pkg. (3 oz. each) ramen noodle soup mix
2 pkg. (16 oz. each) coleslaw blend
4 green onions, sliced
1/2 cup PLANTERS Dry Roasted Sunflower Kernels
1/2 cup PLANTERS Sliced Almonds, toasted
PREPARE salad dressing mix in small bowl as directed on envelope. Stir in sugar and soy sauce.
BREAK apart Noodles; place in large bowl. Discard Seasoning Packet or reserve for another use. Add coleslaw blend, onions, sunflower kernels and almonds to noodles; mix lightly.
ADD dressing; toss to coat. Serve immediately.

PRETZEL SALAD

this might be a Utah thing, it might be an acquired taste. perhaps it's just a childhood memory.
Whatever it is, I like it. SO, give it a try....I know it sounds scary but it's good, I promise!

1 cup crushed pretzels

3 T. sugar

1/2 c. butter soft-melty

pat into 9X13 glass pan

bake 350 for 10 minutes

8oz. cream cheese

1 c. sugar

mix until soft

fold in 8oz. cool whip

______________________

Drain large can of crushed pineapple (save juice)

put on top of cream cheese layer

6oz. raspberry jello (big box)

2 c. HOT water

pineapple juice plus enough water to = 1 1/4 c.

pour into jello

put in bowl in fridge to set a little

pour on top of crushed pineapple and refrigerate

Chicken and Green Apple Salad


Did I mention how much I love salads? Here's another one of my favorites...


1 pkg of Romaine lettuce, cut up

3 - 4 boneless, skinless chicken breasts, boiled and chopped

3-4 green apples, chopped

1 6 oz pkg of slivered or sliced almonds

croutons



Honey Mustard Dressing


1 c mayo

1/3 c mustard

1/3 c honey


Mix all three ingredients together. I usually taste as I go and add more of an ingredient if needed. This is a really good dressing for this salad. I think it's pretty kids friendly. Enjoy!!!

Cobb Salad


I'm a total salad lover and have thankfully turned most of my kids into one too. This is one of my top favorites! Probably not too kid friendly but the nice thing is that you can add or subtract whatever you like.
Romaine lettuce
1 avocado, sliced and diced
1 large tomatoe, sliced and diced
2 hard boiled eggs, sliced and diced
6 strips of bacon crumbled
3 oz blue cheese (I prefer feta)
black olives
red onions
Dressing of choice (I prefer blue cheese)

Cold Chicken Salad


this seems to be a popular dish...it's GREAT for summer!



Boil 4 chicken breasts (add celery, onion and salt)

1 pkg. salad macaroni

2 big peeled apples

dicedcelery purple

grapes

mayo

evaporated milk

lemon juice

onion salt



Directions:cook noodles in same water chicken was boiled in. combine 1 small jar of mayo and a can of evaporated milk. wisk it adding 1T. lemon juice and onion salt. and cut up celery and apples.Cut up chicken, sprinkle with onion salt add macaroni and mayo mixtures. Season with onion salt to taste. Chill for a few hours.

Good stuff! but it's a process with the cutting of apples and celery and chicken. It makes a LARGE amount, so plan to eat it for a week, serve it at a party or invite Aaron for dinner!
